The Squared Circle Fat Elvis Burger

Burger

Ingredients:
2 lbs ground beef
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 eggs
1 tsp peanut butter
2 slices thick cup applewood smoked bacon
Directions:
In a bowl mix all ingredients. Press into 1/4 lb patties. Place 1 teaspoon peanut butter in center of patty. Press and seal outside of of patties together. Cook using method of choice (oven, frying pan, grill) until internal temp reaches 155. Spread 1 tsp Peanut Butter on top of burger and continue cooking briefly until Peanut Butter begins to melt. Add 2 slices thick cut applewood smoked bacon. Spread to taste the ricotta spread on top of bun.

Banana Infused Ricotta

Ingredients:
2-3 bananas
4-6 Tablespoons granulated sugar
cooking spray (regular or butter flavor)
1 cup powdered sugar
1/2 tsp vanilla

Directions:
Slice bananas into thick coins or lengthwise strips, depending on your preference. Pour sugar onto a plate. Roll bananas in sugar, until completely coated. Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute. Transfer to a plate that has been coated with cooking spray. Let cool. Once cooled, cut slices into quarters. Drain 16 oz ricotta. Add 1 cup powdered sugar and 1/2 tsp vanilla. Mix.  Add the quartered bananas and mix again.
