STATEN ISLAND, N.Y. -- Newly-opened Uncle Bourbon’s is a gastropub in Stapleton — 691 Bay St., 718-816-1700; Unclebourbon.com — serving “gourmet” pub grub and a full complement of top shelf bourbon and other spirits.

“We have everything you need for a good night out under one roof,” enthused co-owner George Passariello.

Chef/co-owner Robert Lombardo (above) started at Tribeca Grille, moved onto executive sous chef at Mortons of Chicago, then landed as chef de cuisine at Rothmann’s Steakhouse in Manhattan.

His last gig before becoming a restaurateur, top toque at Mikhail Baryshnikov’s Russian Samovar in Midtown, rounds out the resume.

Passariello says that in addition to bourbon-based mixed drinks and micro-brews served from a 28-foot, 1930’s-style bar, Uncle B’s boasts of Staten Island’s largest selection of top shelf bourbons.
