99 Products to Make at Home: Apple Sauce to Zucchini Pickles!


Home Canning Facts:

1) Home Canning is Thrifty!
Canning jars are readily available, both new and used, and are reusable for decades. Fresh foods, purchased or gathered at the peak of harvest are inexpensive. Having a wide variety of Home Canned foods on hand prevents extra trips to the grocery store(and impulse buys. The average home canner can expect to save 30-50% off the cost of similar prepared foods.

2) Home Canning is Quick and Easy!
If you already cook meals, it is very easy to do small batches of Home Canning at the same time. Home Canning doesn't need to be the week-long project we witnessed in Grandma's day. With modern methods, the home canner can easily produce 8 jars of homemade jam in about 30 minutes or 6 jars of pickled asparagus in 20 minutes.

3) Home Canning is Healthy!
Home Canned fruits, pickles, tomatoes, jams and jellies retain the nutrients just as well as their commercially prepared counterparts without the problems associated with mass produced foods. Canning jars contain no BPA and you have full control over the amount of salt and sugar that is added to the food.

4) Home Canning is Safe!
Recipes for Home Canned products have been laboratory tested for many years and the incidence of problems associated with Home Canned foods have been reduced to negligible numbers through cleanliness and science.

5) Home Canning is Green!
Reusing materials trumps recycling! Canning jars and rings are reusable, for the rest of your life, with minimal care. Canning lids are used once and then can be recycled or, with a small extra investment in Tattler Reusable Lids, the process can be completely reusable. 

Large amounts of food can be processed at one time which spreads the energy cost across the whole batch. For example, a full batch of Home Canned apple sauce made from a local fruit tree would be processed for 20 minutes--that is about 1.5 kWh of energy or 12 cents(in the Seattle area) or about 2 cents of energy per jar of food. The waste goes in the compost, too! Compare that to driving to a store to buy a few cans of apple sauce that are going to cost $1.00 or more each than the Home Canned apple sauce.

Fancy Pantry 101: Flavored Oils, Vinegars and Syrups

Thoughtful gifts and useful products you can make in your kitchen: Flavored Oils, Vinegars, and Syrups bring an extra depth to home cooking!

This upcoming class will discuss and prepare 3 different products and give the tips necessary for safe home preparation.

Part 1) Flavored Oils. The variations of flavored oils is amazing but the average cost of $10.00 per small bottle is off-putting and the horror stories of illnesses traced to homemade oils is pretty scary! You can safely make these products at home by learning the rules.

Part 2) Flavored Vinegars. Add some tang and flavor to your salads and other cooking with your own homemade flavors. Adjust the strength to exactly fit your preferences!

Part 3) Flavored Syrups. Learn how to make flavored syrups and spice up the sweets on your menu!

This is a HANDS-ON CLASS. Each Participant will prepare products in class and take home a booklet of recipes and 3 bottles of products.

Canning Classes- Canning 107 Homemade Ice Cream Toppers & Pie Filling

Individual Apple Pies fresh from the oven...Put up some home canned filling and then make pies in an instant...just about 25 minutes from jar to cooling rack!

Homemade Ice Cream Toppers & Pie Filling

Students will learn how to make Ice Cream Toppers and Pie Filling and then can those products for long term storage and gift giving! This is a hands-on class and attendees will take home a jar of the products made in class. Please bring a cloth shopping bag or hand towel to class to transport your hot jar. Students will also receive a handout covering the topics discussed in class.

Commercial Toppers and Pie Fillings contain a lot of sugar and very little fruit! Learn how to make them at home and that is completely reversed...lots of fruit and just a little sweetener!

Introduction to Home Canning and Food Preservation
Learn the Basics of Home Canning and Food Preservation in this 1 hour lecture. Topics will cover History of Home Canning, Canning Principals, Introduction to Canning Equipment and Specialized Supplies and How to Plan and Purchase Produce for Home Canning. Following the class, students will be able to choose the equipment that corresponds to the food they want to preserve. Attendees will receive a handout with recommended books and supplies for home canning. Students also receive 10% off any canning supplies purchased on the day of the class.

    Jams, Jellies, and Fruit Butters

    Students will learn how to prepare fruits to be converted to preserved spreads. Topics will include cooking with pectin and thickeners, sugared and sugar-free products and different varieties of fruit butters. After the class, students will be able to safely produce jams, jellies and fruit butters for long term storage.* This is a hands-on class and attendees will take home a jar of freshly canned food. Please bring a cloth shopping bag or hand towel to class to transport your hot jar. Students will also receive a handout covering the topics discussed in class.
